Buffalo Mozzarella is freshest in July and August, as during these months the weather in Campania is at it’s warmest, the grass and herbs at their sweetest, and apparently water buffalo are at their happiest (I'm not sure how one determines a water buffalo's happiness levels, but it certainly sounds nice to have blissful water buffalo roaming around high on life for the sheer purpose of producing divine cheese).
