With summer in full swing, I am always looking for healthy recipes and meal options, which is why I was excited to hear about Abel & Cole's Super Salad Box.
Being a lazy cook who typically sticks to my handful of trusted recipes, it's nice to switch things up every now and again to become inspired and learn new recipes to add to my repertoire. For time poor people who still want to prepare great food quickly, there's nothing easier than having someone send you recipes and all of the ingredients you need to make them - genius! The Super Salad Box comes with 3x recipes and all ingredients within the recipes to take the guess work and legging it to the grocery store, out of the equation. For only £19.50 per box, it's great value for 3x fabulous gourmet salads that are certain to impress your guests at your next dinner party or your family. So, what was in the box you ask?
So, as you can see, lots of fabulous, fresh ingredients for you to prepare each recipe. During the course of the week, I tried all three recipes, however my favourite was the Moroccan Nectarine & Crispy Onion Salad. I love all things Moroccan, so perhaps I'm a bit biased! This salad was light with a hint of sweetness and the mint was a lovely addition. My family were raving about this dish a week afterwards, so it went down a storm! Abel & Cole's Moroccan Nectarine & Crispy Onion Salad There were only 5 steps to this recipe, so it was a cinch to prepare. See steps below. Step 1: Halve nectarines and place in a roasting dish for 15 mins
Step 2: Halve, peel and thinly slice onion, toss with olive oil and a pinch of salt
Step 3: Arrange onions around nectarines in a baking dish, add honey and bake for 15 mins until onions are tender and nectarines are sticky
Step 4: Strip mint leaves off stalks and mix in a bowl with watercress, nectarines and onions.
Step 5: Lightly roast almonds in a frying pan until golden and scatter over top of salad and serve. Enjoy!

The newest drink to take the nation by storm?
