Dining at The Squires Restaurant at the Bedford Lodge Hotel, Newmarket, is quite an experience. I had been told that the food was good – but what I didn't expect was a truly memorable experience with food that was both pleasing to the eye and the palate. Executive Head Chef James Fairchild is at the helm of this 2AA Rosette restaurant, and enjoys producing experimental dishes and contemporary creations. As a vegetarian, it can be often be difficult to find unique food in a fine dining establishment, however Squires manages to get the balance just right. We began with some delicious, melt in your mouth, Tomato Bread, followed by a deconstructed Goats Cheese Tart. The main course consisted of Celeriac Ragout with wild mushrooms, parsley puree, soy gel and parsley crisps. The soy lent the dish a pleasant, salty flavour, which was balanced the sweetness of the celeriac. We had heard that desserts were something special – and they definitely were. It was difficult to choose between The fantastic mouth watering options such as Mulled Wine and Pineapple Passion. But one unique dessert truly stood out from the rest – 'Winter Wonderland'. The waitress smiled when we placed our ordered and her smile was even bigger when the dessert arrived. It was jaw-droppingly beautiful, consisting of a magical Winter Wonderland scene, with a white chocolate snowman surrounded by flakes of coconut ice cream, mini footprints crossing the ‘snow’, and tiny sponge shrubs - all handmade by the chef. Inside the dessert a further surprise awaited within the snowman, which was filled with delicious pine nut flavoured ice cream. To keep things interesting, the main menu changes every quarter, while the set menu changes weekly. This is definitely a restaurant to try when you are in Newmarket. A quiet, intimate restaurant with fabulous cuisine, attentive staff and great views over the gardens - what more could you ask for?
